Ground Turkey and Sweet Potato Hash with Poached Egg, Avocado, and Salsa

This recipe is fast and easy and full of flavor. I found the foundational recipe on a site called the Defined Dish. The original dish used bison, but I used what I had–turkey burger. I also adjusted the spices to suit my tastes. It can be served for breakfast or dinner. Serves 2

Ingredients

2-3 Tblsp olive oil

1/2 lb ground turkey (or ground beef, if you wish)

1/2 medium sweet potato, cut into small cubes

1/2 medium onion, chopped

1/2 tsp chili powder

1/2 tsp cumin

1/4 tsp garlic powder

salt and pepper to taste

1/2 to 1 avocado, thinly sliced

2 eggs, poached

Good quality salsa, medium (hot, if you like it hotter)

Directions

Add olive oil to large skillet–non-stick would be best. On medium heat, sauté ground turkey with onion and sweet potato, covered, until sweet potato is cooked. Add spices–chili powder, cumin, garlic powder, salt and pepper. Serve hash topped with poached egg and salsa. Place avocado slices to the side. Enjoy.
