Mango Frozen Yogurt

Because I am counting calories these days, desserts are few and far between. This recipe appeals to me because it is only 138 calories for a 1/2 cup serving. It is delicious, easy to make, and doesn’t require an ice cream machine. I made it from costco/kirkland frozen mango. This is made in a food processor. Pay attention to the maximum fill line. My processor is small, so I made it in 2 batches–1/2 recipe at a time.

4 1/2 cups frozen mangos

1/3 cup brown sugar

1 1/2 cups greek yogurt

Put all ingredients in a food processor (or half if you are making it a half batch at a time). Process until very smooth. You will probably have to stop the machine a couple times and redistribute the mango because it has a tendency to bunch up on one side. This can be kept in the freezer for up to a week. When you take it out of the freezer, let it sit on the counter for 10-15 minutes to soften it a bit. Enjoy.
