My Guacamole

This is my guacamole recipe, the result of years of tampering. It is very easy to make and fast–about 10 minutes.  Avocados, the main ingredient is nutrient dense (e.g., vitamin K and E, folate, potassium, lutein, etc.) and high in calories.

Although generally used in Mexican foods, guacamole can also make a tasty sandwich if smeared on bread with other ingredients like tomatoes, bacon, onions, salami, chicken breast, chard, grated daikon radish and raw mushrooms.  It also goes well on baked potatoes or crudites.

My Guacamole

4 avocados peeled and seeded

juice of one lime

1 tsp salt

1/3 to 1/2 cup onions (depends on how much you like onions), finely chopped

2 medium tomatoes, chopped in very small pieces (if they are juicy, you might want to leave out some of the juice)

1/4 cup finely chopped cilantro

1/4 tsp cayenne pepper

1/2 tsp Louisiana Hot Sauce (optional, but I like my foods on the spicy side)

Mash avocados in bowl with lime juice and salt.  I use a food processor to make the job easier.  A blender might also work.  Add onions, tomatoes cilantro, cayenne, and hot sauce (optional).  Mix well.  Put in covered bowl and refrigerate for one hour before using.
