Baked Sweet Potato Fries

This is something Dan and I eat several times a month.  They are crisp, sweet, and slightly carmelized on one side. The fries are great with barbecue or with vegetarian dishes like the the Quinoa and Black Beans recipe elsewhere on this site.

sweet potato (1 large potato for every 2 people)

3-4 Tblsp. canola or vegetable oil

fresh ground pepper

optional:  cayenne pepper,  a couple of healthy shakes, if you want some spicey heat

Preheat oven to 425.  Peel sweet potatoe; then cut the lengthwise into thick slices.  Slice the slices into french fries.  If the sweet potatoes are extremely long, cut in half.

Put slices in container that can be covered tightly (I use an old Tupperwear bowl that I inherited from my mom).  Add oil.  Grind a healthy portion of black pepper into bowl.  (optional: add cayenne, if you wish)  Shake covered bowl vigorously until fries are completely covered in oil and pepper.  Spread out on large cookie sheet in  single layer.

Bake for 20 minutes.  The fries will appear very dark on the side that was in contact with the cookie sheet, but they are just carmelized.  Don’t fret; just eat.  Serve hot.
